No Added Sugar Date and Coconut Flapjack

  • 150g Whitworths Chopped Dates
  • 100g Whitworths Desiccated Coconut
  • 340g Runny Honey
  • 190g Salted Butter
  • 350g Porridge Oats

Ready… Steady… Bake…

  • Preheat your oven to 180°C/160°C Fan/Gas 4 and line a 20 x 20cm tin with baking parchment
  • Add the dates to a medium saucepan along with 100ml of water and heat over a medium heat
  • Mash the dates until they are mostly reduced to a paste- there will still be some residual date pieces
  • Stir in the honey and bring it to the boil
  • Remove from the heat and stir in the butter until it melts (return to the heat if it needs melting further)
  • Stir in the coconut and porridge oats until they are fully incorporated
  • Spread the mixture into the tray and bake for 20-25 minutes or until golden brown
  • Allow to cool in the tray for 10 minutes before transferring to a cooling rack
  • Once cool, cut into 16 portions and enjoy
