Artichoke Salad

  • 1 Whitworths protein by nature Moroccan grains
  • 3 tbsp olive oil
  • 3 garlic cloves, peeled and chopped
  • 2 preserved lemons, diced (pick out the seeds)
  • 1/2 tsp grated fresh ginger
  • 150g frozen green peas
  • 59g cherry tomatoes, halved
  • 20g fresh coriander, finely chopped
  • 1/2 tsp freshly cracked black pepper
  • Large pinch of sea salt
  • 200g drained precooked artichokes, roughly chopped
  • 60g drained precooked artichokes, roughly chopped

READY... STEADY... COOK...

  • Heat the olive oil in a large saucepan over a medium heat. Mix in the garlic, preserved lemon, ground turmeric and grated ginger and fry for 1 minute until the oil is fragrant
  • Stir in the green peas, tomatoes, coriander, salt and pepper and give a good stir to the content of the pan. Cover the pan and leave for 5 minutes or until the green peas are fully cooked. Mix in the artichokes and Kalamata olives
  • Serve with the Whitworths protein by nature Moroccan grains, the dish can be hot or cold
