Indian Salad

  • 2 pouches Whitworths Protein by Nature Indian lentil dahl
  • 1 cucumber, sliced length ways and de-seeded with a teaspoon
  • 1 medium red onion, diced
  • 2 tomatoes, deseeded and diced
  • Handful fresh coriander leaves, chopped
  • 2 limes, juiced
  • 1 tbsp rapeseed oil
  • 3 tbsp roasted peanuts or cashews, chopped
  • Pinch of sea salt
  • ¼ tsp ground coriander
  • 2 large naan breads

READY... STEADY... COOK...

  • Slice the cucumber lengthways and remove the seeds with a teaspoon, then cut into slices
  • Put the cucumber slices into a serving bowl with the onion, tomatoes, coriander, lime juice, oil and chopped roasted nuts and ground coriander with a big pinch of sea salt
  • Toss together and serve alongside the hot Whitworths Protein by Nature Indian lentil dahl and naan breads cooked as per back of pack instructions
