Spicy Vegan Burrito

  • 1 Whitworths protein by nature Mexican spicy grains
  • 1 Whitworths protein by nature Brazilian smoky beans
  • 4 large flour tortillas
  • 3 medium tomatoes, diced
  • 6 spring onions, thinly sliced
  • 30g fresh coriander, chopped
  • 1 avocado, peeled, and sliced
  • 4 lime wedges

Ready… Steady… Bake…

  • Whitworths protein by nature Mexican spicy grains and Brazilian smoky beans microwaved for 2 minutes
  • Pre-heat a large frying pan over a medium low heat
  • Add your tortillas one at a time and toast for about 30 seconds to a minute on each side until slightly coloured and heated through
  • Transfer the tortilla to a board, and start adding your Mexican grains and the Brazilin smoky beans, chopped tomatoes, spring onions, coriander, avocado in which ever order you like
  • Squeeze over the juice from the lime wedges and begin to fold in the tortilla on both sides then roll it all up. Wrap in foil nice and tight, pull down the top and enjoy
