Vegan Loaded Nachos

These loaded nachos are so scrumptious, you wouldn’t even know they were vegan! Packed full of flavour, colour and plant-based goodness, this dish is perfect for when you have people over and can be whipped up in under 20 minutes. This delicious recipe was created by GoodMoodFoodUK.

  • 2 x 250g pack Whitworths Spicy Mexican Grains
  • 400g lightly salted tortilla chips
  • 150g vegan block cheese, grated
  • Guacamole
  • Pickled red onions
  • Sriracha mayonnaise
  • Fresh coriander
  • For the Tomato Salsa (or use shop-bought): 200g cherry tomatoes, diced
  • 2 garlic cloves, minced
  • 1 chilli, sliced
  • Pinch of salt
  • Handful of coriander, chopped
  1. For the tomato salsa, add all tomatoes and salt into a bowl and mix well.
  2. Leave for 2 minutes then stir in the remaining ingredients and set aside until serving.
  3. Preheat the grill to 250C.
  4. For the nachos, add the tortilla chips in a baking dish.
  5. Cook the Spicy Mexican Grains according to packet instructions then add on top of the tortilla chips.
  6. Sprinkle over the cheese then pop under the grill for 5 minutes or until the cheese is melted and bubbling.
  7. Add on all the toppings to your nachos then dig in!
