Artichoke Salad

  • 1 Whitworths protein by nature Moroccan grains
  • 3 tbsp olive oil
  • 3 garlic cloves, peeled and chopped
  • 2 preserved lemons, diced (pick out the seeds)
  • 1/2 tsp grated fresh ginger
  • 150g frozen green peas
  • 59g cherry tomatoes, halved
  • 20g fresh coriander, finely chopped
  • 1/2 tsp freshly cracked black pepper
  • Large pinch of sea salt
  • 200g drained precooked artichokes, roughly chopped
  • 60g drained precooked artichokes, roughly chopped
  1. Heat the olive oil in a large saucepan over a medium heat. Mix in the garlic, preserved lemon, ground turmeric and grated ginger and fry for 1 minute until the oil is fragrant
  2. Stir in the green peas, tomatoes, coriander, salt and pepper and give a good stir to the content of the pan. Cover the pan and leave for 5 minutes or until the green peas are fully cooked. Mix in the artichokes and Kalamata olives
  3. Serve with the Whitworths protein by nature Moroccan grains, the dish can be hot or cold
