Spicy Mexican Stuffed Peppers

These spciy Mexican stuffed peppers are full of flavour, tasty, quick to make. The star ingredient is Protein by Nature Spicy Mexican Grains. This is a 100% vegan option for a healthy lunch or dinner, with a spicy kick that will leave even the biggest meat and dairy lovers satisfied!

  • 1 pouch of Protein by Nature Mexican Spicy Grains
  • 3 sweet pointed peppers
  • 6 piccolo tomatoes
  • 60g vegan cheese
  • Fresh basil
  • Tabasco (or any other spicy sauce!)
  1. Preheat the oven to 180C, option grill
  2. Cut peppers in half length ways and scoop out the seeds. Blanch peppers in boiling water for 3 mins
  3. On the side, put Protein by Nature Mexican Spicy Grains in a bowl, add quartered piccolo tomatoes and half of the vegan cheese. Mix well.
  4. Remove halved peppers from water, drain well. Fill each half with the spicy feeling, top up with remaining vegan cheese.
  5. Put in the oven for 15 mins, remove after that time and serve with some fresh basil. Add a drizzle of any spicy sauce for an extra kick!
