For a midweek meal that’s quick, easy and incredibly tasty look for further than these chicken quesadillas. This delicious recipe was created by @goodmoodfood.uk
450g chicken thighs or breast, chopped into bitesize pieces
½ red onion, diced
½ red pepper, diced
2 garlic cloves, minced
1 chilli, deseeded and diced (optional)
1tbsp taco seasoning
200g grated mozzarella and 200g grated cheddar, mixed
1 avocado, sliced (optional)
4 tortillas
Sour cream and fresh coriander to serve
Start by making the chicken grain filling. Add the oil to a large frying pan on medium-high heat and once shimmering, add in the chicken and taco seasoning.
Cook for 5 minutes, mixing well and then add the onion, pepper, garlic and chilli (if using) to the pan.
Cook for a further 2-3 minutes, then stir through the Spicy Mexican Grains and season well.
Once everything is incorporated and the chicken is cooked through, remove all the mixture from the pan and set aside.
Add ½ tsp oil to the pan and followed by a tortilla.
Sprinkle a handful of cheese onto one half of the tortilla then top with a quarter of the chicken grain mixture.
Add slices of avocado and a little more cheese on top then fold the tortilla in half.
Flip it over to ensure its crispy and golden on both sides and the cheese is melted.
Repeat with the remaining tortillas then slice each one in half.
Serve with sour cream and fresh coriander then dig in to your chicken quesadillas!
