Gammon Mac & Cheese with Walnut Crust

Use your leftover Christmas gammon and cheese, and turn these festive favourites into a luxurious mac & cheese with a crispy walnut crust that’ll leave everyone wanting more! This indulgent family favourite was created by @goodmoodfood.uk., in collaboration with California Walnuts.

  • 250g macaroni
  • 40g butter
  • 40g plain flour
  • 650ml milk
  • 1tsp mustard, heaped
  • 200g leftover cheese (we used 50g each of Cheddar, Gruyere, Red Leicester and Parmesan), grated
  • 150g-200g gammon, chopped into bitesize pieces
  • 1 x 100g Whitworths California Walnuts
  • Salt and pepper
  1. Preheat the oven to 190C.
  2. Once all the cheese is grated, set approximately 50g aside for the walnut crust.
  3. To make the crust, add the California Walnuts and 50g grated cheese into a food processor or blender. Blitz until a chunky crumb forms and set aside.
  4. Add the macaroni to a saucepan of salty boiling water and cook for 8-10 minutes – it should be al dente as it will continue to cook when baked. Drain and set aside.
  5. For the sauce, add the butter to a medium saucepan on medium heat. Add the butter and once melted, add the flour in. Mix to form a paste.
  6. Bit by bit, pour the milk in, stirring constantly until combined and smooth. Stir in the mustard.
  7. Add the cheese to the sauce and mix until well combined. Season to taste.
  8. In a large baking dish, add the cooked macaroni, gammon pieces then pour over the cheese sauce.
  9. Mix until all the pasta is well coated. Sprinkle over the walnut mix evenly.
  10. Bake in the oven for 20 minutes until golden and bubbling around the edges. Dig in!
