The Good Bite x Whitworths: Lollipop Rice Cakes

Another installment of our series of Summer recipes with The Good Bite, these chocolate, raisin & peanut butter lollipop rice cakes are the perfect blend of sweet and salty with an unbelievable crunch! Imagine the combination of those ridiculously juicy raisins, fluffy and light marshmallow, the saltiness of the peanut butter and the rich crunch of the dark chocolate. Seriously good!

  • 50g of marshmallows
  • 100g of Whitworths Juiciest Raisins
  • 100g of smooth peanut butter
  • 50g of dark chocolate
  • A pack of rice cakes
  1. Melt marshmallows in the microwave in 20 seconds intervals, then spread onto rice cakes.
  2. Melt peanut butter in a microwave in 20 seconds intervals, then add a handful of raisins to rice cakes, allowing them to stick to the melted marshmallows, followed by tbsp of melted peanut butter, spread peanut butter evenly across rice cake.
  3. Melt dark chocolate in microwave in 20 second intervals until completely melted. Probe rice cakes with a toothpick to create a lollipop, then dip rice cake into dark chocolate until half is coated. Allow to dark chocolate to set before eating.
