Halloumi & Tomato Grains

  • 2 x 250g Whitworths Spicy Mexican Grains
  • 2 broccoli heads, sliced into florets
  • 1 aubergine, sliced into chunks
  • 250g cherry tomatoes, halved
  • 1tbsp olive oil
  • 1 x 400g can chopped tomatoes
  • 3 garlic cloves, crushed
  • 3 chillies, deseeded
  • 0.5tbsp honey
  • 2 x 225g blocks halloumi, sliced
  • Fresh parsley, to serve
  1. Preheat the oven to 175C Fan.
  2. In a large roasting tray, add the broccoli, aubergine and cherry tomatoes. Coat in the olive oil then season generously with pepper. Roast for 20 minutes.
  3. Meanwhile, add the chopped tomatoes, garlic, chillies and honey into a blender or food processor. Blitz until smooth then stir in a generous pinch of salt.
  4. Remove the roasting vegetables from the oven and pour over the tomato sauce. Mix well and return to the oven for 30 minutes.
  5. Meanwhile, fry the halloumi slices in a frying pan on medium heat until golden brown on both sides.
  6. Once the vegetables are cooked, stir through the Mexican Spicy Grains until well combined.
  7. Divide the tomato grain mixture between 4 microwavable containers then top with halloumi and fresh parsley.
  8. Best enjoyed hot – microwave with a loosely fitted cover for 3-4 minutes, stirring halfway through.
