No Added Sugar Date and Coconut Flapjack
- 150g Whitworths Chopped Dates
- 100g Whitworths Desiccated Coconut
- 340g Runny Honey
- 190g Salted Butter
- 350g Porridge Oats
Ready… Steady… Bake…
- Preheat your oven to 180°C/160°C Fan/Gas 4 and line a 20 x 20cm tin with baking parchment
- Add the dates to a medium saucepan along with 100ml of water and heat over a medium heat
- Mash the dates until they are mostly reduced to a paste- there will still be some residual date pieces
- Stir in the honey and bring it to the boil
- Remove from the heat and stir in the butter until it melts (return to the heat if it needs melting further)
- Stir in the coconut and porridge oats until they are fully incorporated
- Spread the mixture into the tray and bake for 20-25 minutes or until golden brown
- Allow to cool in the tray for 10 minutes before transferring to a cooling rack
- Once cool, cut into 16 portions and enjoy
