No Added Sugar Date and Coconut Flapjack

150g Whitworths Chopped Dates
100g Whitworths Desiccated Coconut
340g Runny Honey
190g Salted Butter
350g Porridge Oats
Preheat your oven to 180°C/160°C Fan/Gas 4 and line a 20 x 20cm tin with baking parchment
Add the dates to a medium saucepan along with 100ml of water and heat over a medium heat
Mash the dates until they are mostly reduced to a paste- there will still be some residual date pieces
Stir in the honey and bring it to the boil
Remove from the heat and stir in the butter until it melts (return to the heat if it needs melting further)
Stir in the coconut and porridge oats until they are fully incorporated
Spread the mixture into the tray and bake for 20-25 minutes or until golden brown
Allow to cool in the tray for 10 minutes before transferring to a cooling rack
Once cool, cut into 16 portions and enjoy
