Apricot and White Chocolate Cookies

These fruity, chocolatey cookies are the perfect picnic sweet treat. Use our Finest Golden Apricots to create these golden, buttery snacks that no one will be able to resist!

  • 1 x 140g Whitworths Finest Golden Apricots, snipped into small pieces (reserving some for decoration)
  • 150g unsalted butter, at room temperature
  • 100g caster sugar
  • 1 egg
  • 1tsp vanilla extract
  • 1tbsp milk
  • 220g self-raising flour
  • 150g white chocolate, roughly chopped (reserving 50g for decoration)
  1. Preheat the oven to 170C Fan.
  2. Beat the butter and the sugars together until it’s light and creamy. Beat in the egg, vanilla extract and the milk.
  3. Add in the flour and mix until a thick dough forms. Work the white chocolate and apricots into the dough until evenly incorporated.
  4. Line a baking tray with parchment paper then scoop out the cookie dough in tablespoons and roll into a ball.
  5. Place the balls onto the baking tray, leaving space for them to spread out when baking. Lightly push a fork into each dough ball to slightly flatten them out.
  6. Bake for 20-25 minutes, until the cookies are golden. Remove from the oven and gently transfer to a cooling rack to cool completely.
  7. Whilst cooling, melt the white chocolate.
  8. Once cooled, drizzle the white chocolate over the cookies and then top with the reserved apricot pieces. Enjoy!
