  • 1-2 x 250g Whitworths Brazilian Smoky Beans
  • 500g mince beef
  • 3tsp olive oil
  • 1 x 30g sachet taco seasoning
  • 160g rice, white or brown
  • 1 x 325g sweetcorn
  • Little gem lettuce, roughly chopped
  • 1 avocado, sliced
  • 200g cherry tomatoes, quartered
  • Small handful coriander, roughly chopped plus extra to serve
  • Salt and pepper, to season
  1. Cook the rice according to packet instructions then drain, rinse and set aside.
  2. In a large frying pan, heat 2tsp olive oil on medium-high heat. Once hot, add the mince and cook until browned all over.
  3. Add in the taco seasoning and the Whitworths Brazilian Smoky Beans. Stir until well combined and cooked through. Set aside to cool.
  4. For the tomato salsa, add the tomatoes, 1tsp olive oil, coriander, salt and pepper to a bowl and mix well.
  5. Heat the sweetcorn according to packet instructions then season to taste.
  6. To assemble, divide the rice, beef and bean mixture into four containers, followed by the sweetcorn and lettuce. Top with tomato salsa, avocado and chopped coriander.
  7. If reheating, remove the lettuce, tomatoes and avocado before warming. Once hot, add everything back in and enjoy!
