Nutty Kitchen Supermince Lasagne

  • 1 pack Nutty Kitchen Supermince, including the seasoning sachet
  • 1 tbsp oil
  • 1 red onion, finely chopped
  • 1 carrot, diced
  • 400g tin chopped tomatoes
  • 1 tbsp tomato purée
  • 500ml water
  • 9–12 lasagne sheets
  • 30g butter or dairy-free alternative
  • 30g plain flour
  • 400ml milk or dairy-free alternative
  • 75g grated cheese or dairy-free grated alternative
  • Salt and black pepper
  • Optional: mushrooms, courgette, peppers or spinach
  1. Heat 1 tbsp oil in a large pan and gently fry 1 chopped red onion for 2 minutes. Add 1 diced carrot and any extra veg you fancy, such as mushrooms, courgette or peppers.
  2. Add 1 pack of Nutty Kitchen Supermince and the full seasoning sachet, along with 500ml water. Stir well to make sure the Supermince is evenly mixed through.
  3. Add a 400g tin of chopped tomatoes and 1 tbsp tomato purée. Bring to the boil, then reduce the heat, cover and simmer for 20–25 minutes, until the water has mostly absorbed and the Nutty Kitchen Supermince is soft and saucy.
  4. Meanwhile, make a quick white sauce: melt 30g butter or dairy-free alternative in a saucepan, stir in 30g flour, then gradually whisk in 400ml milk until smooth and thickened. Season with a pinch of salt, pepper and nutmeg, if you like.
  5. Spoon a layer of the Nutty Kitchen Supermince sauce into an ovenproof dish. Top with lasagne sheets and a layer of white sauce. Repeat, finishing with white sauce and a sprinkle of grated cheese.
  6. Bake at 200°C / 180°C fan / Gas 6 for 30–35 minutes, until golden, bubbling and cooked through. Leave to stand for 5 minutes, then serve with a crisp green salad.
